The Bra and Gourmet Area recipe: Stuffed zucchini gratin

Eating vegetables is not boring at all. Bra presents you this recipe, which has zucchini as its main ingredient, a very versatile vegetable, which we can eat both raw and cooked, which combines with anything.

Ingredients:

  • 2 zucchini
  • 1 can of tuna in brine or in oil
  • 1 egg L
  • 3 tablespoons of fried tomato
  • 4 stuffed olives
  • Grated cheese (mozzarella, parmesan)
  • Extra virgin olive oil
  • Pepper
  • Salt

preparation:

  1. The zucchini are washed and cut in half with a knife (Area Gourmet recommends your Arcos knives) and with the help of a paring knife we make cuts without reaching the skin in the form of diamonds. Season with salt and pepper to taste and drizzle with extra virgin olive oil.
  2. Bake the zucchini for 30-40 minutes at 180ºC up-down option. Once ready, we remove the pulp with the help of a spoon and reserve.
  3. Meanwhile we prepare the filling of the zucchini. We cook the egg for 13 min. in a saucepan, then pour into a bowl of very cold water where we leave it for 15 minutes. Peel and reserve.
  4. In another bowl, pour the can of crumbled and drained tuna, the cooked and chopped egg, 3 tablespoons of fried tomato and the zucchini pulp. We mix everything and use as zucchini filling.
  5. Top with mozzarella and grated parmesan. Gratin for 5 minutes or until golden.
