Preparation: Add 55 ml of water for every 450 g of sifted mixture to obtain a hard consistency royal icing. Mix the icing for about 7-10 minutes on low speed until you get a hard white icing. The icing is ready when it is bright white, has lost its shine, and peaks can be scooped out without falling off. If you use a hand mixer, be careful that it does not get stuck. Tip: Add 1 teaspoon of water per 200 g of icing for a medium consistency, or 2 teaspoons of water for a fine consistency.
